Empanaditas de Cajeta - Dulce de Leche

Hello everyone, just wanted to post the recipe for the empanadas de cajeta. It took me forever to post because I couldn't find the recipe for them but good thing I found it. Also I want to thank Nena for helping me and taking the pics and video. We had a great time making them and by the way we were too busy talking and yes, our first bunch burned. But in the end the burned ones tasted pretty good. Well here it goes, You will need...

-- 6 cups flour

--3 cups sugar (you can use splenda if u want-meaure the same)

--1/4 tsp. baking powder

--1/4 tsp. salt

--3 cups shortening

--2 tblsp. vanilla

--1 egg

--1 can cajeta la lechera brand

--coca cola about 1/2 cup

In a bowl put the flour, baking powder and salt. Set aside. In another bowl put the shortening, the sugar, vanilla and egg. mix together with your hand until the shortening is well mixed with the sugar, start adding the flour mix and mix until well until it starts to form a dough ( it will be dry ) at last add the soda and keep on mixing until you can form a dough ball and it dosen't stick to sides of bowl ( if mix is still too dry keep adding coke little by little. Once u form it in a ball, you preheat your oven to 350 dg. Grab your cookie sheets and grease them. Then U take your tortillera out and start forming little balls and pressing each one between the two sheets of plastic. Take the top sheet off and smear a little bit of cajeta with a plastic knife or butter knife and fold over platic sheet to close the empanada and seal the edges. There is a video on the bottom showing how to make the rounds in the tortillera. Once you filled the cookie sheet with empanadas you put them in the oven for about 15-20 min. Keep checking on them and once the edges start getting golden brown they are done. Cool on cooling rack. Enjoy! I loove these with milk mmmmm!
